An example of this is our 100% porc negre sobrassada from Mallorca.
This is a very special product that comes from the family reserves of the Company family and is made with 100% porc negre meat. Well minced meat, mixed with salt, a touch of black pepper and tap de cortí paprika, which is what gives it its characteristic red colour and particular flavour aroma.
At Can Company we take care of the whole process: we plant our own cereals and make our own flour, we sow, dry and treat our tap de cortí, we breed and care for our animals from birth and we look after their welfare. In this way, we control the entire production process in a closed circle in which we supervise every step until we come up with a unique product.
The familiar sobrassada, which is distinguished by a special black string, is made the old-fashioned way, that is to say, using and making the most of all the noble parts of the pig. It is a sobrassada that requires a minimum curing period of 6 months and for which we have to wait up to a year and a half until it reaches its optimum point.
It is a family product that we at Can Company have decided to share with our customers. A sobrassada that is born at home and made with the care and love of those who know that good ageing is essential to make us proud in the future.
