Charcuisine by Xesc Reina: Puff pastry with Nora and apple

What is Charcuisine, new visitors to this site may ask. And at Can Company, we will always be happy to answer this question. Charcuisine is that wonderful concept that rediscovers traditional products and preparations and sees good charcuterie as food to enjoy and have fun with.

For example, ancient Majorcan sausages such as the 17th century figatella or one of our star products, the nora, that we at Can Company have rescued from oblivion. This last sausage is made with cooked pork, typical Majorcan dried fruit such as dried apricots, plums and dates, and flavoured with sweet spices.

And because we want the nora to shine again in the splendour of times gone by, today Xesc Reina, our master charcuterie chef, proposes a recipe that is as simple as it is delicious: a puff pastry with apples and pickled nora.

A quick and great recipe to make with the little ones of the house and offer as a starter or first course. It's original, local and very creative.

Would you like to prepare it at home? We'll show you how to make it step by step:

-        Preheat the griddle and let it get really hot.

-        We cut a clean apple through the middle. We don't need to remove the skin or the core. Then cut it into thin slices and place them on the griddle. Important: The apple must darken. As soon as it loses its white colour, the apple also loses its own sugar. Thanks to its own juices, it will take on an almost caramelised texture.

-        In another dish, we make a special marinade: oil, a little beer, dry lemon shrub and a little salt.

-        If the apple is already dark, it is best to put it in the marinade for a few hours so that it takes on the flavour and its texture becomes much more tender.

When it is time to prepare the dish, we will put a layer of apple, a layer of nora, a layer of apple and a layer of nora. We'll put a little lemon shrub on top and pour some of the marinade on the sides.

And we already have the starter!
